Watermelon Peach & Feta Salad
Ingredients
For the salad
- 4 cups seedless watermelon, cut into bite-sized cubes
- 3 ripe peaches, sliced or diced
- ½ cup crumbled feta cheese
- ¼ small red onion, very thinly sliced
- ¼ cup fresh mint leaves, roughly torn
- 2 Tbsp fresh basil, thinly sliced, optional
For the honey-lime dressing
- 2 Tbsp extra-virgin olive oil
- 2 Tbsp fresh lime juice
- 1 Tbsp honey
- ½ tsp lime zest
- ¼ tsp salt
- Freshly ground black pepper, to taste
Directions
- Make the dressing. Whisk together the olive oil, lime juice, honey, lime zest, salt and a few grinds of black pepper.
- Prepare the fruit. Add the watermelon and peaches to a large serving bowl. Add the thinly sliced red onion and mint.
- Dress the salad. Drizzle the honey-lime dressing over the fruit and gently toss to coat. Be careful not to break up the peaches.
- Add the feta. Sprinkle the feta and optional fresh basil over the top. Give everything one very gentle toss, or leave the feta on top for serving.
- Serve right away. This salad is best served fresh while the watermelon is cold and crisp.
Farm-fresh tip: Chill the watermelon before making the salad, but let your peaches ripen at room temperature for the best flavor. Assemble everything just before serving so the watermelon doesn't release too much liquid.
Make it a meal: Add grilled chicken or shrimp and serve with crusty sourdough for an easy summer dinner.
Optional kick: A very light sprinkle of chili-lime or citrus-chili salt is fantastic with both watermelon and peaches.
