Ingredients

  • 1 head red cabbage
  • 3 apples (Gala work well)
  • 1 onion
  • ¼ cup vinegar
  • 3 Tbsp oil
  • 1 Tbsp sugar

Directions

  1. Prep the cabbage. Remove the core from the red cabbage and slice the cabbage thinly.
  2. Marinate. Place the sliced cabbage in a large bowl, add ¼ cup vinegar, toss well, and let it marinate for 15 minutes.
  3. Prep the onion. While the cabbage marinates, thinly slice the onion.
  4. Cook the onion. Heat 3 tablespoons oil in a large skillet. Add the sliced onion and fry until it begins to soften.
  5. Add the cabbage. Add the marinated cabbage to the skillet and cook, stirring occasionally.
  6. Prepare the apples. Slice the apples and toss the slices with 1 tablespoon sugar.
  7. Finish cooking. Add the sugared apples to the cabbage and stir together. Cook for 30 more minutes.
  8. Serve warm.

Tip: The vinegar is what keeps the cabbage a bright purple instead of turning it a dull blue-gray. Don't skip the marinating step.
