Peach Crumb Bars
Ingredients
Crust & Crumble
- 3 cups flour
- 1 cup sugar
- 1 tsp baking powder
- ½ tsp salt
- ¼ tsp ground cinnamon
- 1 cup cold butter
- 1 egg, slightly beaten
Peach Filling
- 5 Tagge’s peaches
- ½ cup sugar
- 1 Tbsp cornstarch
- ¼ tsp ground cinnamon
- Juice of ½ lemon
Frosting
- 1 cup powdered sugar
- ¼ tsp almond extract
- 1 Tbsp milk
Directions
- Whisk together the flour, sugar, baking powder, salt, and cinnamon.
- Cut in the cold butter until the mixture becomes crumbly.
- Add the slightly beaten egg and combine. Set aside.
- For the filling, whisk together the sugar, cornstarch, and cinnamon.
- Squeeze in the juice of half a lemon.
- Peel and dice the peaches, then add them to the sugar mixture and toss to coat.
- Layer the crumble mixture, peach filling, then remaining crumble mixture in a baking dish.
- Bake at 350°F for 50–55 minutes.
- Whisk together the powdered sugar, almond extract, and milk to make the frosting.
- Drizzle the frosting over the baked peach crumb bars and enjoy!
Tip: Let the bars cool before you drizzle, or the frosting will melt right in instead of setting up. Press about two-thirds of the crumble into the bottom of the dish for the crust and save the rest for the top.
