Peach Crumb Bars

Ingredients

Crust & Crumble

  • 3 cups flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ tsp ground cinnamon
  • 1 cup cold butter
  • 1 egg, slightly beaten

Peach Filling

  • 5 Tagge’s peaches
  • ½ cup sugar
  • 1 Tbsp cornstarch
  • ¼ tsp ground cinnamon
  • Juice of ½ lemon

Frosting

  • 1 cup powdered sugar
  • ¼ tsp almond extract
  • 1 Tbsp milk

Directions

  1. Whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. Cut in the cold butter until the mixture becomes crumbly.
  3. Add the slightly beaten egg and combine. Set aside.
  4. For the filling, whisk together the sugar, cornstarch, and cinnamon.
  5. Squeeze in the juice of half a lemon.
  6. Peel and dice the peaches, then add them to the sugar mixture and toss to coat.
  7. Layer the crumble mixture, peach filling, then remaining crumble mixture in a baking dish.
  8. Bake at 350°F for 50–55 minutes.
  9. Whisk together the powdered sugar, almond extract, and milk to make the frosting.
  10. Drizzle the frosting over the baked peach crumb bars and enjoy!

Tip: Let the bars cool before you drizzle, or the frosting will melt right in instead of setting up. Press about two-thirds of the crumble into the bottom of the dish for the crust and save the rest for the top.
