Honey-Lime Watermelon Popsicles
Ingredients
- 5 cups seedless watermelon, cubed
- 2 Tbsp fresh lime juice
- 1–2 Tbsp honey, to taste
- Pinch of salt
Optional additions
- ¼ cup fresh mint leaves
- ½ cup diced strawberries
- ½ cup coconut milk for a creamier pop
Directions
- Add the watermelon, lime juice, honey and a tiny pinch of salt to a blender.
- Blend until completely smooth. Taste and add additional honey or lime juice if needed.
- For smoother popsicles, pour the mixture through a fine-mesh strainer. This step is completely optional.
- Pour into popsicle molds, leaving a little room at the top.
- Insert the sticks and freeze for at least 6 hours, preferably overnight.
- To release, run the outside of the mold under warm water for a few seconds and gently pull out each popsicle.
No popsicle molds? Pour the mixture into small paper cups, freeze for about an hour, insert wooden sticks once partially frozen, then continue freezing until solid.
Fun variation: Drop a few tiny pieces of fresh fruit into each mold before adding the watermelon mixture. Strawberries, blueberries or diced pear would all work.
