Creamy Cauliflower Soup

Ingredients

  • 1 head cauliflower
  • ½ medium onion
  • 4 cups beef broth
  • Oil, for sautéing

Directions

  1. Prep the vegetables. Chop the onion and cut the cauliflower into small pieces.
  2. Sauté the onion. Heat a small amount of oil in a large pot. Add the onion and simmer for 2–3 minutes.
  3. Add the cauliflower and broth. Add the cauliflower to the pot, then pour in 4 cups of beef broth.
  4. Cook until tender. Simmer for 10–15 minutes, or until the cauliflower is soft.
  5. Blend. Carefully transfer the soup to a blender and blend until smooth and creamy.
  6. Serve immediately and enjoy!

Tip: Let the soup cool a few minutes before blending and fill the blender no more than halfway—hot liquid expands. An immersion blender right in the pot works too. Chicken or vegetable broth swaps in fine if that's what you have.
