Blueberry Zucchini Muffins
Ingredients
- 2 cups flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- 2 eggs
- ½ cup oil
- ¾ cup brown sugar
- ¼ cup sugar
- 2 tsp vanilla
- 1½ cups shredded zucchini
- 1 cup blueberries
Directions
- Preheat oven to 350°F and line or grease a 12-cup muffin tin.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon.
- In a separate bowl, whisk the eggs, oil, brown sugar, sugar and vanilla until smooth.
- Stir the shredded zucchini into the wet ingredients.
- Add the wet ingredients to the dry and stir just until combined. A few streaks of flour are fine—overmixing makes tough muffins.
- Gently fold in the blueberries.
- Divide the batter evenly among the 12 muffin cups.
- Bake at 350°F for 20–24 minutes, until the tops spring back and a toothpick comes out clean.
- Cool in the pan 5 minutes, then move to a rack.
